Description:
Reindeer nigiri topped with elderflower gelé, served with horseradish foam and dried lingonberry.
Ingredients:
Inner fillet of reindeer, elderflower, yoghurt, crème fraiche, horseradish, lingonberry, Blenheim Orange (Swedish autumn apple), salt, sugar, lemon, gelatine.
All ingredients in the Northern Light piece originate from Sweden.
The reindeer meat is from the outmost North of Sweden – from the Sámi society of Laponia stretching north of the Polar Circle.
The Sámi culture is very closely linked to the wild Northern nature and the traditional livelihoods such as sustainable reindeer husbandry, fishing and hunting.
The elderflower gelé is made of wild elderflowers picked in Österlen in the Southern part of Sweden and juice from Swedish autumn apples from a 250 year old Blenheim Orange tree in the village of Kiwik, Sweden.
Instead of the traditional green wasabi the Nordic Light piece comes with a foam made of Swedish white horseradish with flakes of dried lingonberry picked in the Swedish woodlands.
